High protein & fiber overnight oats. How does it affect my glucose levels? #glucose #bloodsugar

Let's see what high protein overnight oats do to my blood sugar.

This is an overnight oat recipe that is high in protein and fiber. I started out with an 8 oz mason jar. Then, I added:

- 1/4 cup of organic sprouted rolled oats

- 1 teaspoon of chia seeds

- 1 teaspoon of hemp parts, which are high in protein

- Half a scoop of protein powder

- 1 teaspoon of no-calorie sweetener (I'm using monk fruit)

- 1 tablespoon of frozen blueberries

- 1 teaspoon of vanilla extract

- 1/4 cup of Fair Life 2% milk, which is high in protein as well

I put the lid on, shook it up, and put it in the fridge overnight. Before I eat this, I'm going to top it with a teaspoon of crushed walnuts.

Altogether, this has 300 calories with 24 g of protein, 10 g of fat, 8 g of fiber, and 17 g of net carbs. I've tested regular oatmeal by itself before, and it did spike my blood sugar. I'm curious to see if there's enough protein in these overnight oats to offset the carbs from the oatmeal.

So, let's give it a try and see what it does.

All right, it's been a couple of hours. Let's have a look at the glucose monitor to see what it did. You can see here there's a blood sugar spike of 25 mg, which is not bad at all.

There's a significant amount of protein and fiber in these overnight oats, which makes it a great breakfast for me. That protein and fiber will help me to stay satiated until my next meal.
