You probably don't like the Notes app because you don't know how to use it. Let me show you some tips and tricks.
Tap on the three dots down here and make sure auto-refine handwriting is switched on. And this will automatically smoothen and straighten out your handwriting.
Tap on the three dots at the top and under Math results, choose "Insert results." And this will automatically solve equations and even update them if you change the variables.
On certain iPads, you'll have this Image Wand tool, and you can circle around any words and turn that into a sketch. You can also just draw a circle on a blank page, and it will create an image based on the contents of your note.
If you want to add in a word, just long-press and push the words out.
