Hello there. So today is my mother's birthday. Of course, she is no longer here with me, but it has just made me think of so many things about her. And one of the things was some of my favorite foods she used to cook for me. And one dish was her meatloaf. And so tonight, I decided to make meatloaf. Of course, I'm vegan now, so I'm going to make vegan meatloaf using my burger business, and of course, a couple other things. But uh, I figured I'd take y'all on a journey with me. Yes. Listen, sometimes uh, part of grieving or missing a loved one who's no longer here, making a special meal can help with that. So give it a try. All right, let's get to the meatloaf.
So first thing we're going to do is take some bell peppers, red and green, put them in the mini food processor and chop them up like so, like that. This is how they look. Then we're going to take them and add it to some vegan ground. Then we're going to get our Burger business, go on and sprinkle it on top like so, like that. And then we're going to mix up some chopped mushrooms and onions; it looks like so, like that. Add that to our ground with our seasoning. Add a little bit of vegan bread crumbs, and then we're going to mix it all up together. Got to get it all good, like so, like that. And then add a little bit of coconut aminos, a little bit of barbecue sauce, not too much, some very good garlic, put as much as you want to, honey, that's your business. Mix it all up together. And then we're going to take it and put it into our pan like so, like that. It's ready for some sauce. So let's going to take some ketchup; this is my mama's favorite way to make her sauce for her meatloaf. Put a little bit of mustard. Then you going to add some barbecue sauce, and then we're going to add some brown sugar, and we going to mix it all up till it gets thick. And we're going to go ahead and put it on top of our meatloaf. You're going to bake it right with the topping on there, so it looks like so, like that. I'm baking mine on 380 for about 45 minutes to an hour. Take it out, baby, and it is ready. See how it's looking, boiling on the sides, baby? It's so hot; you got to let it cool off for a little bit, baby. Honey, that'll tear your whole greedy spirit up. Okay. But now, if you want to, you can put a little extra sauce on top; you don't have to. I just put a little bit where it's uh, cooked down into the the ground a little bit, so I went ahead and put a little extra. So I had some rice and some garlic kale that I made to go with this and along with some cast iron skillet green beans and garlic. And let's go ahead and cut it up like so, like that. Honey, look at that. Oo, it's nice and stiff. Oh my God, it's about to be so good. Go on and take it out, put it on that plate, baby. Let me give me a little tomato, honey. Look at the tomato, baby. We got my mama's meatloaf all right here. We go. Did you really get into it, honey? Let's really get into the meatloaf, my mama's meatloaf. And then we say, "Oo, God, we thank you. Amen." And now let's try it. All right, get a little piece of the meatloaf first, just so y'all can see, cooked all the way through, baby. That's good. Get another little piece of little green bean as well, little piece of uh, tomatoes, honey, a little bit, little bit of kale, little and a little bit of tomato on it like so, like that. Cuz I can. That's good. That's good for many reasons. One, cuz it is okay, but two, because it reminds me of my mom. Okay. Um, I hope that you all take a moment, think about your loved ones who passed on, and um, maybe think about a favorite meal they used to make, make that meal, and sit with it a while.
