Adobo Chicken Rice in a Rice Cooker

Welcome to part 25 of my rice cooker series. This is my Adobo chicken rice in a rice cooker.

The key to all the flavor in this dish is letting it all sit in the rice cooker longer than normal for a sticky glazed chicken and rice. It's a perfect balance of savory and tangy with a rich umami of soy sauce, a slight kick of vinegar, and a subtle sweetness from the brown sugar.

To your rice cooker, add your rice and a little water. From there, toss in your diced chicken and throw some soy sauce and vinegar right on top. Jeff loves onions, thinly sliced instead of diced, but you can cut yours however you prefer. Then, right on top, add brown sugar, garlic, and bay leaves. The brown sugar plays a huge role in giving the rice that beautiful sticky glaze at the end, so don't be skimping.

From there, just cook it all as long as you normally would rice, and that's it.
