Hey, I'm Savin Lomax. Every weekend, I'm traveling to a new city, giving three groups of aspiring food truck owners the chance to open the food truck of their dreams in their hometown. These teams will build menus, seventy-five slices of bacon, race around the city, and compete for customers and the best spots. They'll attempt to out-cook, out-solution, and outsell each other in a series of challenges for a chance to win $10,000 to put towards their dream food truck business.

This weekend, I'm in Dallas, Texas, where Mr. Po-boys, Mike Walk, and Walking Noodle are about to find out how demanding the food truck business really is. Who will become Dallas's hottest new food truck? There's only one way to find out. Let's do this. Welcome everyone to the Great Food Truck Rally. Guys, I'm not gonna beat around the bush; your dream food trucks are right over there. Go check them out and meet me back here.

Each of these teams was asked to send me a sketch of what their dream food truck would look like, and now they're about to see those dreams come to life. I could not believe my eyes; that is the truck that I designed. It is the most surreal thing. It was gorgeous. [Music] Big yellow truck with my name, Mr. Po-boy, on the side. No way we can be stopped; we're going po-boy Dallas. The truck is more than any of us ever imagined; it's amazing. I wouldn't change a thing. We can totally win with this truck, guys.

Hey guys, let's go. Dallas is a great food city; we have more restaurants per capita than any other city in the country. Dallas isn't quite hit the food truck scene yet. I think we have a huge advantage because we know our city like the back of our hands. I think it's a slam dunk. Your truck is supplied with everything you need to succeed except for food. Here's three hundred and fifty bucks for each team; shop for all the food you'll need for the entire weekend. This is your only chance to stock up. I'm excited about the money, but we do have catfish and shrimp; those can be some high-priced items, so we have to watch our budget. Guys, think of this competition as one giant relay, and I'm about to send you out on the first leg. You'll have 24 hours to sell as much as you possibly can, and the lowest earner will be eliminated. Okay, that's right; only two of you are gonna move on to the second leg of this rally. Go make it happen, guys. One team has the chance to be the next great food truck right here in Dallas; it's yours for the taking.

Our rally is underway, and our newbie teams are figuring out how to stock a food truck for the very first time. Everything's gonna be like triple the recipe, quadruple the recipe. How many customers? That's gonna be a challenge for stay-at-home mom Stephanie, her husband Jared, and her best friend Misty. It's Stephanie's dream to serve food professionally, but she's never done it a day in her life. Stephanie's been at home for ten years raising our kids, allowing me to pursue my dreams. Now it's her time. So Stephanie's whipped up a menu of pure Tex-Mex comfort food, and that starts and ends with one delicious dip. My guacamole recipe has been in the works for a few years; it's on point. What's gonna be people's favorite dish? Sorry, we just took the wrong exit. Oh great. Let's talk about strategy when we get there. We're gonna go ahead and shop for all this stuff.

Walking Noodle is having no trouble planning their meeting. I think we just focus on the three dishes that way we can maximize our time. Okay. That's because Liz, her sister Uno, and their best friend Hanna all have experience in professional kitchens. Now they're putting their skills together to help start Liz's dream food truck business. And so what if I give you a budget of 150 for all the meat, all the meat? Okay, so I need to get pork belly, skirt steak, and chicken thighs, right? My sister and I are Thai, and Hana is Vietnamese, so we're taking all of our favorite flavors and making Eats Hive at Nummies fusion noodle truck. I can't wait. I can't wait. Man, I'm just so pumped right now that we fixin' to go get everything that we need real quick. We gonna be…

Almond, Cedric, Esther, and Ryan met in culinary school and have worked steadily in the food industry ever since. Now they want to work for themselves, and they think they have the perfect product: Louisiana-style po-boy sandwiches. Dallas does not have any po-boy food trucks that I know; I don't think they have po-boy sandwich shops, so we don't take over. [Music] Dijon mustard; that's gonna go in the ring. Eli's doctor, Mr. Po-boy's, is gonna take over the Dallas scene because it's fresh, it's new, it's unique. Chipotles in adobo, right here. You will have chicken, fish, and steak. Put them on a spicy chipotle mayo; top it off with tomatoes. You got your winning sandwich. There we go. Go ahead and eat the points. Dang, I feel… It's so special because we like to mix and compose a lot of different flavors. 91 right now. All right, so when you take that first bite, you hit sweet, spicy, savory; I mean, all these different types of flavors in your mouth all at one time. We need the cornmeal for the hush puppies. Is that owners out? That's on this. Okay. Here's the Asian food section. Soy sauce, I get two of those. The pho noodles… The great thing about doing a Thai Vietnamese fusion is that traditional Vietnamese soup is… and how to start a nice… The cinnamon's really warm spices in it. Brown sugars, here, here, ground sugar. And Thai food has a lot of more fresh spices like the lemongrass and the ginger. Once you put all of these flavors together, you've got like this earthy, fresh, like spider explosion. Time is money. All right, I know Tex-Mex, I know Mexican food; it's my culture, it's who I am. My favorite ingredient has to be avocados. Avocados are the good fat. You don't buy unripe. It offers… You got 14 more. I need about… Give up 41. There any other… The bacon guacamole grilled cheese needed to be on the menu. Okay, 75 slices of bacon. I know that my chicken tortilla soup is awesome, so I've been told. I'm looking for seasoning. I know that I can make a mean taco. I decided to make a Frito burrito; that's my kids' creation, so I'm so proud to have that on my menu. Feeling flustered. It's gonna be all right. I know I've never shopped that fast. Life, don't worry about it. All right, let's roll.

With only 22 hours left until the elimination, our three teams are trying to find a location so they can start selling their Negroes. It's busy, and there is a brewery over there. Good with that? Yeah. Trinity Groves is an up-and-coming area in West Dallas, and the reason we chose this is because there's a good lunch crowd and there's plenty of parking. We're gonna be at Trinity Groves at about noon. It's it okay if I tag you on social media and you share it? Yeah. It's a place you want to go. Dallas Market Hall. Our strategy right now is location, and the location needs to have a lot of foot traffic. Dallas Market Hall has a convention going on right now. Dallas Market Hall, four minutes away. We're headed to the location now. Did you go ahead and test all the people, let them know that we're coming? Yes. I've already got everybody texted; I've already told everybody, tell their friends, so we're good to go. We headed uptown; there's office builders, and I know a lot of people that work there, so I figured, hey, I can call them up. Go ahead and make that hush puppy batter since you eat that the most. I told them to text everybody that they know; it should be packed. About time, you ready? [Music] Hey. Oh, he's dead over here. Nobody came out. Then the rain start coming. Man, is right. You don't know if it was the rain, if it was the time… What time is it, man? Which place in our time over here? We have to think of something fast. This is a very, very bad storm. I don't know if this is gonna work right now.

Three teams are out on the streets of Dallas competing for their very own food truck business. Mr. Po-boys found a location; it's dead over here, but can't find any customers. Oh my Kwok found customers; this is Dallas Market Center, but couldn't park. Where would be a good public place? This is all private party. And Walking Noodle was set up in trendy Trinity Groves. This is where the excitement starts. It's almost ready to start selling. Our signature dish is going to be the Walking Bowl. You've got the noodles on the bottom; you've got the ginger chicken on top with all of our herbs and then our broth. And the best part is we top all of our bowls with art block and crack. You would say stuff like that. Who's the best part of the Walking Path? Fried pork belly, fried shallots, fried garlic, and white pepper, and it's the most addictive thing; like I wake up wanting to eat that; like I want a bowl right now. Oh, oh, shoot, my finger's out. I think I'll need… Right now? Are you gonna cry on the corner right here? Any spot of available, and we're just gonna carve… We are actually from Fort Worth, so for this competition to take place in Dallas, we're a little unfamiliar. You can go a little faster. I feel like we are wasting time at this point, but you know what, I have a friend who has a store in the West Village. We're in business. There's a lot of foot traffic. Bingo. All right, let's go. Let's go. All right, let me start prepping. Got one for you right here. Extra, extra Walking Crack. Thank you, ladies. What's up, ladies? [Music] This is Journey Grove, so I figured this would be a great way to capture people for lunch, but their ring kind of put a damper on it, but there's a lot of news about showing club shoes. Yeah, it's raining. That sounds like you have a leg up. Are you posting photos? Any photos? I've been too busy cooking. Oh yeah, you got to post the photos, your fins. Yeah, the crack that goes on the fun is like my favorite thing in the entire world. Really? That's a garnish; that's a garnish on top; that's the crunch aspect. They've been very encouraging. Hot soup on a cold day; how can you go up? But he did suggest that we do a video of how we get our dish together. It's so tender, good. You have to come try Walking Shame Bowl. Okay, we'll see what happens. I'm slicing and dicing right now. The name of our truck is on my clock. You can't open for business until you have guacamole. My mom hates guacamole; she hates it; used to eat it. So where did you learn to make it? I don't… Nobody teach me how to make nothing. The ingredients are avocados, lime, cilantro, onions, tomatoes, and jalapenos. Smoosh it and wish it. Cumin and chili powder normally does not go in guacamole, and those are the two key ingredients. Does it need any more lime? Awesome. The bacon needs to be cut; the ground beef needs to be cooked, and the chorizo needs to be cooked. Got it. I have four different dishes to make that require four different prep times. The sugar in there. A Frito burrito, chicken tortilla soup, bacon guacamole grilled cheese, and chorizo tacos. It's a lot of work. Okay, we're gonna catch up, guys. Are totally gonna catch up. Door number one, it's open. Yes. Go team. We're live. First time. Where are all the people? The timing is off; lunch is long gone; happy hour's not quite here yet. There's no one on the street. Would you like to try our food truck? And I'm going to just ask people to try Step's food. Would you like some food? Would you like to try our food truck? Be your part, so close. Are you running for our time? No trick. Do you like to try our food truck? I can do that. There he is, my very first customer. I have been waiting for this day forever. Really good, good. He likes it. Yay. On a cold day, who wouldn't want to cut a chicken tortilla soup? I need someone happy with my food. I can make more people happy with my food. Oh, or a grilled cheese coming out. There's your chips and glove. We are in a groove right now. My wife's cooking; I got the money; Misty bringing in the customers, and we're finally doing some business. I'm excited. Thank you for coming by seeing us. I think the girl cheese is definitely attempt, got a little spice and kick, and I like it. You have a good weekend. [Music] He's getting a little later in the day. Let's go ahead over to Deep Ellum and see if we can catch some of that foot traffic over there. What they doing? What's right here? What are they? What we got going on right here? We have to go where the crowd is. Deep Ellum is full of bars, clubs, restaurants. We knew it was gonna be packed. We are going to meet apart right here. Damnit, Cedric. Wow, I don't know what it came clean off. We're not selling at all. Too much time is going by; this isn't looking good at all. It's right there. We have no idea what the other teams are doing. Let's just throw it in trouble. And if we're behind, it could be lights out. Mr. Po-boy, what a day. Come on, man.

All three of our brand new food truck teams are racing to sell as much as they can before tomorrow's elimination. Mr. Po-boys has had a miserable start with no sales and one broken… Life was just thrown in trouble. Walking Noodle got off fast with a strong social media campaign, and All My Guac struggled to find a location and is now trying desperately to catch up. I'm used to cooking for my kids, who all want different things every night, but never on a time constraint. I would say the best thing is probably as Death's award-winning tortilla soup. Really? As she won at the local State Fair. So wait a second; she won the award here in Dallas in the very first competition she ever competed in. This huge way. You guys need to tell people that you need to market that. Why didn't I think of that? I didn't know you had won an award for the tortilla soup. This is the time to start bragging, and it's probably something I would have thought of eventually, but this is a crash course in food trucking, and I needed that little tip. Have you been marketing online? Calling people? Social media? Photos of the food? I want to see you make some phone calls; get someone on the phone and tell them you need their support. BJ, I had Stephanie… I am in a crazy situation, and I'm choosing a crazy situation because she's operating a food truck for the first time. Every single time you operate a food truck, day one who's crazy, day two is crazy; the first couple weeks… Thanks. Thanks, girl. Your friends and family want to support you. I'll hockey team on three. Walk on three. One, two, three. Go get it. Let's go. Black. You catfish is spicy now. Sounds good. Slice it up; that'll work. All right, coming in Mr. Black Fish. The Mr. Black Fish is a blackened catfish with our own special blackened spices with our Chipotle remoulade and our special spicy pickled red onions, cilantro lime slaw. It comes with two hush puppies, and they are jalapeno cheddar bacon light spice. Sure. All right, one Mr. Black Fish. I have a Mr. Black Fish spicy for my man John. Deep Ellum taught us something; we couldn't just rely on word of mouth and take some people we know; we had to go somewhere where it was a lot of foot traffic. [Music] What's up? Tell me how it's going to come on. We finally fell in… Who finally getting rolling? Tell me about the neighborhood, guys, because this neighborhood looks vibrant; it looks like there's tons happening, a lot of foot traffic, lotta bar, a lot of eateries. Tell me about the menu, guys. What's special? What's different about the menu? Show the man. All right now, the Mr. Thompson, who you looking at? Oh, you know it. Flank steak with the spices brim you lot. So once you bite into it, the yolk just goes over to state, and you like spicy, you like use the finger to bite. Now watch out now, don't hurt yourself on this. Oh yeah, don't forget that hush puppy. I chop… Wow, that spice is amazing. You like it? Mr. Po-boys delivered a 10 of a sandwich: tender, flavorful, spicy, nice soft roll. They're fun, they're engaging, and they're welcoming. That's what you need to have at a food truck. If you have good energy, you're gonna have more customers. I'll see you guys soon. All right, be wait… Not… I'll do Mr. Black… Mr. Black Fish spicy for my girl Kristi. This Black Fish sounds… All right. Selling, selling, selling. Let's get it going. It is gonna be really good. Hello. Hey, guys. Save it, guys. Its semen is it? I know you're all racing to make as much money as you can, but I'm about to shake it up. Running a successful food truck is about adapting to the taste of your market. Dallas has the largest Korean-American community in Texas. I didn't know that. Did you know that? I didn't know that. So I want you to incorporate Korean cuisine in your menu. Okay. Kimchi is Korea's national dish; my personal favorite variation uses the Korean radish. Do you like kimchi? Is MG… Can't eat… Make fresh kimchi; apply it to your menu; sell it as a $10 special along with your regular dishes. Okay, we have to make a kimchi with the Korean radish. There's a phenomenal Korean marketplace in the heart of Koreatown; that's where you're gonna get your minds. You can find the recipe in your truck's box. Got it. Once you've shopped, shut down for the night; you can start selling again in the morning. Okay, and remember the team will salt the least bite tomorrow at noon is going home. We'll do it. Good luck, then go get it. All right, thank you. Thanks. Okay, let's go, girls. Okay, we got it. We found it. Okay, we got a plan. I need to figure out what this is. I don't know what this marina is. We got this recipe for this kimchi, and half of the things I can't even pronounce; it's got like plums in it. Let me ask her… Your part Korean? Why should you do mean to my suit? Oh, green onion. Yes, bigger, bigger. We now have our list; let's go back to the produce to get the daikon radish because that's the main ingredient. Okay, we try to make a Korean kimchi. So what would be good? You want the big one? All right, perfect. Thank you. We get them greetings from the store. Then that was a big relief because the day we had is… Time to get some sleep. Oh my gosh, that was crazy. [Music]

It's day 2 in Dallas, and I've told our teams they must find a new location to park their food trucks. Walking Noodle is headed to Oak Cliff, where their friend runs a fitness center. Well, I've worked out here before, and I know how intense the workouts are there. The first thing we say we get done is what are we eating so we can replenish. Gonna be perfect. All Mike Walk is driving to the Bishop Arts District. This part of town specifically has been completely revitalized; it's kind of a hipster trendy place to go. And so is Mr. Po-boys. We got a company where you want a park; you see anywhere you want a park? We got to find a spot before they do. Our teams in Dallas have all found a place to park; hope we get some people out here right; and are racing to make as much money as they can before noon. Girls, girls, coaching… That's because I'm going to send the lowest earning team home. Hi, I'm doing today, and I've thrown in another ring. All the teams must add a kimchi special to their menu. I'm gonna get all the prep for the kimchi out that first reading in the net. We decided to do a brown sugar glazed chicken to go with that kick. So basically making like a simple syrup with this blade… Well, sugar, simple. So then that way when you bite into it, you get a nice savory sweet spicy type of dish. I'm doing about a tablespoon of minced garlic, get that flavor in there, about a… about a teaspoon of ginger. Chopping up the scallions. So there's fish sauce; you don't need no… But that's about a third of a cup. Goes out a third a cup of this coarse grain song. Trying to hit that… Oh, right, you want the spice, other chili flakes. So we're gonna do about a half a cup of that plum sauce. We're gonna do about a cup of that chopped up this huge Korean radish. Just a little bit. That's looking beautiful, man. Mr. Kimchi, just need that slaw on top. Pretty nice. Beautiful. Ready roll. Oh my god, we've got two of our featured dishes. We decided to put big chunks of the kimchi radish into our bowl with the noodles and all of our fresh herbs. We're gonna sell as the Kimchi Walking Bowl. This is the featured dish with the kimchi; it's that Korean twist. I love it. Trying to figure out the best way to make it look authentic but also the right size kimchi. It's gotta go on the taco. The chorizo is soft; that radish, it's crunchy; too different texture; that's gonna go together. To order the kimchi special… So good. She loves it. That's my first time having it. Cryptococcus… That means a lot because I really honestly wasn't sure how well it would do. So do you like spicy? I do. All right, we have a kimchi special for ten dollars. It's my wife… Your kids, man. I haven't seen him in a couple days; have been bit some longer. I was… You know that right there is what it's for. We all have kids. I have two daughters, and I'm competing for not just myself but for now. [Music] [Laughter] Little girls; they never see me at work doing what I love. I got three misses. Kimchi's… My family showed up. I feel like I got my mojo back. I mean, I needed that. Oh wow, they're tasting our food; they're buying it; we have a crowd around us. Absolutely. I can tell you hands down this is the best walk money I've ever had. [Music] It's… Hello. Hey guys, it's Savin. I say what I say, then… Oh, what did they have to say? No wait, there's only one hour left to sell, and then one of you will go home. But before that happens, I'm gonna make all of you move one more time. Let's see em in this time. I pick the neighborhood and the location; make it good. The next stop is 1600 Main Street in the downtown central business district. You all need to sell head to head for the last hour, so we're on heads ahead with the other tracks. It's your last chance to make as much money as you can before the elimination, so it's gonna be fast and furious. Good luck and go get it. Thank you, Savin. Okay. [Music] We're almost there. Our next location, we're heading towards downtown Dallas. Perfect. We can do this. People are going to be out for lunch; there are people everywhere roaming the streets; this is a good thing; this gives us some excitement, energy to feed off of. Yeah, yeah. Oh my gosh, I'm ready. This is it; I am so ready to get this started. Let's go. Hey, we need to get that boy clean boarding, right? I don't have knives; where did I put the knives? Okay, so if you want to go out there, Misty, and start to drive in traffic, okay, just tell them that this food is better than… These are the two trucks. Okay, okay. Hey, guys, you like tacos? Like tacos, right? Would you like a bowl of soup? Give it a try. [Music] I'm just connecting with people, and people are starting to come over and listen to what I have to say. Smoosh it together; put in the culture. Honey, can you slice the steak a little bit thinner next time? Yes, I will. We can't even make orders fast enough to accommodate people. Tacos, tacos, tacos. All right, all right. Hey, I'm doing today. I'm good. I'm good. Wanna try it, boy? Come over here, talk to me for a second. Walking noodles; they say love noodles. Oh my block; they said wakka moly on tacos. We sell meat; we know about beef flank steak that comes with a fried egg; there's a little spicy lettuce and tomato; hopefully this can put us over to beat the other team. All right. [Music] I've always wanted a food truck but haven't actually chased people down the street. You can tell them to come and like try my food; it's a little bit different. Actually… Look, it's the baby… Really quick… And I love kissing little babies. Where's…

The baby. We have time to legal. You gotta get customers. Oh, we got some people in the corner. We got Ryan in his element. A lot of people, a lot of foot traffic. Are you on tour? Do they stop it? Let me see the schedule. Why not? The blocking sale. See, look, your whole crowd. Let's do it. We're gonna go with this one. Crying. All right, that'll be $9. All right, ordering. Order in. Let's go. They sound a hell of a lot of po' boys over there. Try to got customers walking by. Hey guys, how you doing? Hey guys, hungry? I want the triple axel, triple A bull and walking same bowl. Yes, it's do or die because we want to move to the next round. We want to move to the next challenge, and it's stressful. I know you like tacos. I see it in your eyes. Seven dollars. I think we're a head-to-head with—well, I don't think—something I'm worried about it. Oh my god, check the time. We only have two minutes left. Dr. Chicken now, pie man. We're running out of time. Are you coming? That's right. Some tacos. We can't go home. We're not going on. Didn't comment. [Music] What do you guys want? Order. Very good, thank you very much. Whoa, baby. One more rhyme. Whoa. I don't have time to clean that up, people. Yeah, this would be the last one that we get. Our time is up. The challenge is over, and I feel great about my team. They did exactly what I thought they would do. All right, I got to walk to the car. Yeah, right now I'm feeling pretty good about where we are, but at the same time, I'm not sure what to expect. All right, it is a mixed emotion moment. It's one of us will be eliminated today. You [Music] [Music]

Alright guys, running a successful food truck business is being able to roll with the punches and handle whatever comes your way, and you all did so. Congratulations, y'all. I'm from Texas now, y'all. Y'all may be here. Feels good, man. Nerve-wracking. I just want to know what everybody did so we can know if we're still in this race or not. Okay, the food truck business is all about getting people excited about your food and turning that excitement into actual dollars. Let's find out who sold the most food in the last 24 hours, because as you know, the team who made the least is out of the race. [Music] Congratulations, Walking Noodle. You made the most money with four hundred and fifty-three dollars. We're still in the race. We've really worked very well as a team. We've been in sync. First talent is like every single day just keeps getting better and better. The team with the second highest total and safe from elimination is [Music] Mr. Po' Boys. Yeah, you made 438 dollars. Who are still in the race. Gratulations. Yes. Step back. Oh my gawd. 409 dollars. A tremendous effort. Thank ya, but unfortunately, you are now out of the ring. Please hand me the keys to your food truck. I'm so proud of my team. I want some of that tortilla soup next time. You got it. Right. Misty doesn't cook the way I cook. Jarrod doesn't operate the way I operate, but we were able to come together, and they trusted me. They trusted my minion. They trusted my palate. That was huge. Congratulations. It's important for me to teach my kids how to cook, to be proud of what they create, to make it their own, and they now can see mommy doing what she loves. It didn't like I was able to cook. People pay for it. Mr. Po' Boys and Walking Noodle, you are still in the race. Congratulations. The final challenge begins tomorrow morning, and you're gonna be selling breakfast. You're gonna have a very early morning start. Oh, and there's one more thing: you can only use the ingredients you have on your truck, so you need to get creative this time. The first team to hit $200 and cross the finish line on the Continental Avenue bridge will win the great food truck rally. Who wants that $10,000? Go get it. [Applause] [Music]

It's day three in Dallas, and both teams are headed to areas where they think they can hit the $200 sales goal first. We're parking in front of a really popular coffee shop, so maybe we get some of the patrons to the coffee shop that's in Stoney food. We're like one selling away from winning. We need to get this. You're gonna make this happen. Walking Noodle chose the spot in Uptown. We cannot let our followers down, and Mr. Po' Boyce is about 20 minutes away in the Kessler neighborhood of Dallas. We're headed to a mixed-use building on the heads, apartments and restaurants. I did a lot of texting last night. I called my pastor. I said a little prayer and I said, "Hey, grab the whole congregation. I need them." We hope your prayer didn't hit the ceiling; it bounced back down. It's two of you guys. How about we do one of each? That's awesome. Awesome. Now have one Mr. Rooster and one Mr. Fritch—we have to make me breakfast item, so let's do the Mr. Rooster. The Mr. Rooster is a pancake batter dill chicken breast along with a nice fried egg without exposing a lowly sliced tomatoes on our french road. Those happens. Then we have our Mr. French Toast French roll dipping and our french toast batter, and we took the prime rib that we had cooked that to perfection. Who doesn't love French toast? Our sandwiches can go for breakfast, can go for lunch, can go for dinner, can go for brunch, go go parties, bar mitzvahs, shindigs, whatever they need us to do, we got it. This is that before we get to the finish line. You know we have to treat this like we did yesterday there and just work as hard as you can because obviously we do not have your typical breakfast item on our menu. Let's do the chicken noodle soup.
