Here's one dish you can make for under $2. Today we'll be making shakshuka, which originates from North Africa, and this is going to be the budget and express version of it. This is meals under $2.

You want to start off with onions in the pan and a drizzle of olive oil. Make sure you turn on the heat to medium and not high. You want to brown the onions and not burn it like I did here, trying to film at the same time.

There are three spices you want to use: crushed red peppers, paprika, and ground cumin. I'm using garlic marinara sauce from Trader Joe's. The entire jar is $2. We're using about 10 ounces or two fifths of it. So, this is going to cost about 80 cents. You also want to add about 2 ounces of water, which is going to be a four of a cup.

Sourdough bread is $3.49 at Trader Joe's. We're using one slice, and there's 14 slices, so that's going to be 24. We're using white eggs, and the most affordable ones from Trader Joe's is going to be $2.99. So, it's going to cost about 75 cents for the three eggs that we need for this recipe.

Once your sauce is simmering, you want to add your three eggs to it and you want to cook it for about five to six minutes over medium heat. Then you take out your toasted sourdough bread and you want to add it on the pan or put it to the side. Shakuka is meant to be eaten right out of the pan, so you don't need to transfer it to a plate or anything like that.

It's going to cost about 15 cents if we add up the cost of the onions and the spices used to make this dish. So, if we add everything up, the cost to make this dish is going to be $1.94.

Shakshuka is meant for breakfast, but I eat it for dinner all the time. One of my most favorite affordable meals out.
