Very many anxiously notice these sad changes in themselves. But scientists have discovered that there are people who fade much more slowly than others. They retain health, memory, and a clear mind longer. They very rarely, or never, get cardiovascular diseases and diabetes. They sleep better and therefore live their days much more pleasantly than other people, and live to a much more advanced age. All these people are distinguished from others by one thing: all of them had much more of a substance in their body that scientists themselves, not sensation-seeking journalists, have called the vitamin of youth and longevity. And today, we will find out together which few products, available to any person in any country, will help increase the amount of the vitamin of youth in the body and thus postpone or even slightly reverse age-related changes. Hello, my name is Max Pogorely, I am a nutritionist with a Candidate of Science degree. Today, everything will be scientific, as always. The link to Telegram and Instagram is in the description of this video. The discovery of the substance that scientists called the vitamin of longevity began with a huge study that lasted 22 years. It involved 3,200 people who were initially healthy, and for 22 years, scientists almost observed their health status, took blood tests, and watched who among these people got sick, when they died, and from what diseases they left this mortal world. Scientists tracked the levels of 112 different substances in the blood of all these people and found that only five of these 112 substances are directly related to longevity and the preservation of a sound and clear mind and health with age. You probably haven't even heard the names of these substances; they sound like incantations to an uninitiated ear: Ergothioneine [music] Acetyl-L-carnitine. Let's examine each of these substances and determine which foods and life factors affect their levels in the blood. But today, we will talk about the most, most important one. It is this substance that scientists have called the vitamin of longevity and youth, because the health of your heart and cardiovascular system, the risks of getting cancer and diabetes, and the chances of maintaining a clear mind and energy until old age directly depend on the amount of this vitamin of youth in your body. The more vitamin of youth you have, the better. In principle, you can also use supplements; they already exist. But it is best to get the vitamin of youth from real, living foods, because in addition to the vitamin of youth, they also contain many other substances that are also extremely important for maintaining health and longevity. But, of course, these products must be consumed constantly, systematically, in the right quantities, and it is also important to make these products tasty for you. But unfortunately, not everyone is characterized by consistency. And let's be honest, how many times have you personally been fired up with the desire to regain your youthful slimness, energy, and health? You got fired up and quit halfway. And it is called Ergothioneine. Of all five winners, Ergothioneine reduced mortality from heart disease and prolonged life the most. All these substances are very beneficial, but look at this graph: Ergothioneine is at the very top and quite far from the other five substances. It has truly surpassed them in usefulness. Ergothioneine reduces overall mortality from all other diseases by 14%. In addition, it also protects you from diabetes, your skin from the destructive effects of ultraviolet radiation, and even protects people from radiation. Ergothioneine. But the most important thing is that it allows you to maintain a clear mind and sound thinking until old age. As scientific studies have shown, Ergothioneine slows down neurodegeneration, i.e., the deterioration of brain function with age, which directly affects memory and soundness of mind. It protects people from Alzheimer's and Parkinson's diseases and from senile dementia. In addition, Ergothioneine can protect you from age-related vision loss, specifically from age-related macular degeneration, through which all visual signals are transmitted to the brain. What the world looks like for a person with macular degeneration, you can see in these two pictures, and it is, frankly, quite frightening. It is clear that age-related macular degeneration is not the only vision disease; for example, there are also cataracts, presbyopia, and myopia. And these vision diseases can be postponed or even reversed if you eat correctly. And I talked about twenty products that help preserve your vision in a separate video called exactly that. The link to it is in the description, and I highly recommend you watch it. Scientists have determined that the amount of Ergothioneine in the body directly indicates the chances of developing age-related macular degeneration, i.e., becoming blind with age, as well as the risks of Alzheimer's, Parkinson's, and senile dementia. But in general, the higher the level of Ergothioneine in the blood, the less people suffered from various age-related diseases, and the longer, happier, and healthier they lived, of course. People in different countries eat differently and get different amounts of Ergothioneine in their food. And in countries where they get the most of it, they live the longest. For example, in Italy, where they get about 5 mg of Ergothioneine per day on average, compared to America, the United States, where they get approximately 1 mg, i.e., five times less, people in Italy live approximately 5 years longer than in the United States. Ergothioneine prolongs your life, and you not only live longer but also healthier, and consequently, you get much more pleasure from this life. For this, it is important to constantly get Ergothioneine from your food and in sufficient quantities. And unfortunately, the degree of absorption of Ergothioneine from food also decreases with age, and its expenditure increases because the body uses Ergothioneine to treat and protect diseased organs. And therefore, with age, the amount of Ergothioneine in the body steadily decreases, and this directly affects both lifespan and age-related diseases. Consequently, if you increase the amount of Ergothioneine in your diet, its amount in the body will increase, and this will help the body fight diseases much more effectively, reduce inflammation, which is one of the important causes of age-related health deterioration, and consequently, you will be able to live longer and healthier. The reason for the uniqueness of Ergothioneine is not even that it is one of the most powerful antioxidants in our body. Ergothioneine is so important that our body even has a special transporter that captures Ergothioneine molecules and delivers them to diseased organs, and the body purposefully accumulates Ergothioneine to improve their condition. This is a unique ability, and no other antioxidant is delivered by the body in such quantities purposefully to diseased organs. Moreover, the body has a special transporter protein whose sole task is to capture Ergothioneine and deliver it to diseased organs. The body accumulates Ergothioneine and spends it extremely economically, and this allows scientists to conditionally call Ergothioneine a vitamin. But it is no less important for us than all other vitamins, and it works best precisely in interaction with various vitamins, primarily with vitamin E. Therefore, scientists say that although Ergothioneine does not correspond to the classic description of a vitamin, it is so important for our health that it can be considered a vitamin of longevity. Of course, as soon as the importance of Ergothioneine was proven, it immediately began to be sold in supplement form, which received all the necessary official approvals. But my task as a nutritionist is not to feed you supplements. Nutritionists are not people who sell you supplements; it is precisely such traders who disgrace nutritionists and have turned the name "nutritionist" into an insult. The task of a nutritionist is to give you that set of products from which you can get the maximum of all necessary substances to be healthy, and Ergothioneine is no exception. It is present in almost all products that we eat, albeit in very small amounts. The least amount of Ergothioneine is in vegetables, so-called leafy greens, which are salads and various aromatic herbs. Then come whole grains and fruits, and after them, root vegetables and milk, fish, and meat. And the highest consumption of Ergothioneine. Photograph our recommendation number one. It happens precisely when the amount of these products in the diet increases in descending order: vegetables, salads, and greens; fish and seafood; and after them, fruits and root vegetables, and then whole grains. A very familiar set of products, you will say. They form the basis of any healthy diet, and not without reason, because they contain the main part of Ergothioneine that we consume. But there are two products that contain Ergothioneine more than others. The first is mushrooms, and I have singled out mushrooms as a separate group. And you can read about their benefits in my brochure "The Foundation of Your Health," where I give 14 rules of healthy eating, and also watch my video on how mushrooms prolong life. In this video, I provide numerous studies that show that consuming mushrooms at least a few times a week significantly reduces the incidence of heart disease, cancer, increases immunity, ensures healthy aging, and protects against senile dementia, improves gut health, and lowers bad cholesterol and blood sugar, and even saves from depression. But mushrooms protect most strongly precisely from memory loss and cognitive abilities with age. In people who consumed mushrooms more than three times a week, the chances of memory impairment and decline in mental abilities with age were halved. And in addition, as I showed in my video, in people who regularly consume mushrooms two to three to four times a week, mortality decreased by as much as 21%. And this means that they lived longer, for example, by those same 5 years longer that Italians live longer than Americans. And you know what the reason is? You've probably already guessed: the more people eat mushrooms, the higher their Ergothioneine level in the blood, and the less age-related decline in mental abilities and memory. Well, of course, to get enough Ergothioneine from mushrooms, two conditions must be met. First, eat enough mushrooms, and second, eat precisely those mushrooms that contain Ergothioneine. The mortality by those 21% that I mentioned today. It is necessary to eat approximately 72 grams of some averaged mushrooms on average per day. That is, for example, 150 grams one day, and not eat mushrooms at all another day, and then on average you will get approximately 75 grams per day. Or you can eat mushrooms even every day; it will be incomparably more beneficial. And approximately this amount of averaged mushrooms, about 70 or 100 grams, contains precisely the necessary 5 mg of Ergothioneine, which scientists consider a sufficient amount to maintain its high level in the body. Of course, Ergothioneine is consumed, so it accumulates quite slowly. And for the levels of Ergothioneine in the body to double, for example, in this study, people had to eat 100 grams of champignons daily for a whole 4 months. Yes, yes, yes, the very ordinary farm champignons that we look at with such disdain very often. And although champignons are the most accessible and cheapest option for mushrooms, they are far from the best. The best, highest quality champignons contain approximately half the Ergothioneine of farm oyster mushrooms, and these are the best. And the worst contain four, six, ten times less Ergothioneine than oyster mushrooms. Oyster mushrooms are generally one of the best available mushrooms in terms of Ergothioneine content. And only so-called boletus mushrooms, which are white mushrooms, birch boletes, bay boletes, porcini, and their close relatives, contain approximately 20-30-50% more Ergothioneine than oyster mushrooms. Immediately after white mushrooms come the so-called royal oyster mushrooms, King Oyster mushrooms in English, they are also called steppe oyster mushrooms. You see how they look. These mushrooms have also started to be sold in many countries. After them comes ordinary oyster mushrooms, and then, at a considerable distance, follow shiitake mushrooms, and far behind them are ordinary white and brown champignons. All of them contain hundreds, and sometimes thousands of times more Ergothioneine than any vegetables. Of vegetables, garlic has the most Ergothioneine, but even in garlic, it is 10 times less than, for example, in shiitake or oyster mushrooms. And in other vegetables and fruits, Ergothioneine is minimal, minimal. But even this minimal amount is enough to barely maintain the health of many people. Of course, the Ergothioneine content in mushrooms grown in different conditions can vary significantly, by two, three, four times. And for example, in some shiitake, as you can see from this study, Ergothioneine can be 2.5 times more than in some white mushrooms. The same applies to champignons. Here is a machine, a stupid Google period, a portal button – this is the very champignon that we eat. And as you can see, the Ergothioneine content can range from 190 to 400, 550, and in some, it was even 7,000 mg per kilogram of dry weight. I was disappointed by chanterelles, in which there is practically no Ergothioneine at all. And the same for oyster mushrooms. In English, oyster mushrooms are called oyster mushrooms, so Google translated all this as oysters. But these are indeed oyster mushrooms. And as you can see, oyster mushrooms grown in different conditions and on different substrates, for example, on straw or on grape or olive pomace, contained very different amounts of Ergothioneine. That is why scientists recommend, first, choosing those mushrooms where the probability of a high amount of Ergothioneine is highest, and these can be oyster mushrooms, and consuming these mushrooms regularly, preferably daily and in sufficient quantities. And about this are our next two recommendations. Photograph them, please. Recommendation number two: Daily consumption of 50 to 100 grams of certain mushrooms, in fresh weight, in any form from dried to fried and marinated, allows you to double the amount of Ergothioneine in the body in 4 months and effectively counteract aging and age-related diseases: heart disease, diabetes, cancer, memory impairment, and Parkinson's and Alzheimer's diseases. Recommendation number three: The most Ergothioneine is in mushrooms: white mushrooms, bay boletes, birch boletes, porcini, and others. After them come oyster mushrooms, even farm-raised ones. In so-called steppe oyster mushrooms or royal oyster mushrooms, Ergothioneine is almost as much as in boletus mushrooms. And after them come golden, i.e., yellowish oyster mushrooms, and then gray ones. But the amount of Ergothioneine can differ by 10 times. In shiitake, Ergothioneine is almost the same as in ordinary oyster mushrooms. And in ordinary white and brown champignons, Ergothioneine is two, four, sometimes ten times less than in oyster mushrooms. In chanterelles, Ergothioneine is practically absent. Of course, if we compare by taste, then white mushrooms or bay boletes with birch boletes are incomparably tastier than even forest oyster mushrooms, let alone farm-raised ones. But there is another limiting factor, and that is the Chernobyl disaster. The Soviet Union, in its last throes, so to speak, with its last breath, contaminated almost all of continental Europe with radioactive cesium, and it did so unevenly. My homeland, Ukraine, Belarus, and Eastern Poland suffered the most. Look at the map: here the level of radioactive cesium in some regions exceeds safe norms many times over. Yes, decades have passed. Yes, radioactive cesium has already partially decomposed, partially it has gone deep underground. But mushrooms are distinguished by the fact that they extract cesium from the ground with their mycelium and bring it to the surface in their fruiting bodies. Therefore, photograph my fourth recommendation, please, so as not to forget: After the Chernobyl disaster, soils and forests in Europe are very contaminated with radioactive cesium and other radionuclides. Mushrooms accumulate a high amount of dangerous radionuclides in themselves, and in many regions, their amount in mushrooms can exceed safe norms several times over. Therefore, in Europe, consuming farm-raised mushrooms is a safer way to obtain Ergothioneine. I used to assess the contamination of mushrooms with radioactive substances because I really love mushroom picking and I turned a blind eye to the potential danger. But when I read scientific studies, I became convinced that living in Ukraine, where I used to pick mushrooms before moving to Turkey, it is better not to do it at all. There are many studies, and there are special maps of contamination of various regions with radiation. And living in different countries, you can determine from these maps whether you should pick mushrooms in your countries. Well, in any case, very few people pick mushrooms, and real forest mushrooms are too expensive and rare, so they are available to few. And therefore, it is farm-raised mushrooms that become the most important source of Ergothioneine. That is why, after gathering information for this video, I started eating oyster mushrooms daily. I buy them a couple of times a week, stew them a little each day, add these mushrooms to various dishes. It is both tasty and extremely beneficial. That is why I will now add more recipes with mushrooms to my recipe collections and to those collections that I provide with the "Building a Healthy Body Together" program, because without mushrooms, you are unlikely to build a healthy body. Unfortunately, cooking mushrooms for breakfast is a bit tedious, so mushrooms did not make it into my breakfast recipe collection. But you can boldly add mushrooms to tasty omelet recipes. But we still have one more product that is a rich source of Ergothioneine, and that is ordinary Spirulina. As this study showed, dried Spirulina contains as much Ergothioneine, and some varieties even more, than oyster mushrooms, of course, also dried. If we take 100 grams of oyster mushrooms and dry them, we get approximately 12 grams of dried mushrooms. Consequently, to get enough Ergothioneine from Spirulina alone, you need to eat approximately the same amounts of Spirulina. However, friends, there is a certain catch with Spirulina. The fact is that in Spirulina, besides the beneficial Ergothioneine, there are also many not-so-beneficial substances, for example, cyanides. Everyone is familiar with potassium cyanide. So, cyanides are other salts of the same hydrocyanic acid. They get into Spirulina along with cyanide-containing Spirulina cultures. In addition, Spirulina often contains pesticides used to kill harmful algae, and heavy metals are also found in Spirulina. Therefore, unfortunately, those 10 or 12 grams of Spirulina that need to be eaten to get enough Ergothioneine, the same amount as from 100 grams of oyster mushrooms, for example, cannot be eaten. And about this is our recommendation number five. Photograph it, please. Spirulina can contain almost as much Ergothioneine as oyster mushrooms, so consuming 10 to 12 grams of Spirulina per day can provide a sufficient amount of Ergothioneine. It should be remembered that many varieties of Spirulina are contaminated with cyanides, arsenic, mercury, and pesticides, and therefore the safe amount of Spirulina determined by scientists is 3-5 grams per day. Consequently, from a safety perspective, you cannot ensure a sufficient amount of Ergothioneine by consuming only Spirulina.
