Pumpkin Seed Butter that Beats Peanut Butter

I'm going to show you that allergy-friendly foods can taste as good or better than the original. I'm Dr. Ahmed, a physician who developed food allergies in adulthood, and we're going to be cooking dishes that are safe to eat and taste amazing.

This toasted pumpkin seed butter tastes just like peanut butter, but better. And if you have to avoid nuts, you're never going to feel like you're missing out. So, let me show you how easy it is to make.

Pumpkin seeds aren't just delicious, but they're packed with nutrition, including magnesium, which is important for the conduction of the electrical signals of the heart and zinc, which is critical to the immune system and wound healing, but also for the formation of testosterone. So, let me show you how we take this great nutrient and make excellent toasted pumpkin seed butter.

We're starting with two cups of unroasted, shelled, and unsalted pumpkin seeds. To that, I'm going to add 2 teaspoon of a neutral oil and just mix that to make sure everything's well coated. I've got a baking sheet here lined with foil. And I'm just going to spread it out on there. I've already preset the oven to 300° F. And these are going to roast for about 45 minutes until they're nice and golden brown. And just be sure to stir them halfway through just to mix everything and make sure it's roasted evenly. All right, I'm going to get it into the oven.

Here I have the toasted pumpkin seeds. They're still a little bit warm having just come out of the oven. And that's perfect because when they're a little bit warm, it's easier to blend them and they come out a lot smoother. So, I'm going to add my two cups into this food processor. We're going to give that a little bit of a mix. And what I like to do is start off by just trying to get these as smooth as possible. And keep in mind that the order of how we put ingredients in does matter. And I have absolutely made that mistake. So let's start by just processing these. I'd like you to see how this has really started to come together. And it's very fine. And at this point, you can tell the oils are starting to release.

I have here 3 tablespoons of a neutral oil. I'm going to add just a little bit at a time and then continue to process it until we get a nice smooth mixture. Now, this is exactly what we want to see. I turned up the speed a little bit, but you can tell that the oils have been released nicely and it's starting to clump together better. So, I'm going to go ahead and add the last bit of my oil. And at this point, you want to process it to the consistency that you want. Now, I tend to prefer it to be as smooth as possible. So, I'm going to let it go for a little longer. Here we go. A nice smooth consistency. I want to show you just the way I like it. If you're happy with the consistency, this is when you're going to want to add the other ingredients.

I have a sweetener. In this case, I'm using 1 and 1/2 tbsp of maple syrup. I've got 3/4 of a teaspoon of salt and half a teaspoon of vanilla extract. We're going to mix that all together. Wow, this just looks so awesome. Look at that beautiful color from those roasted pumpkin seeds. You can smell the richness of the maple syrup. I will tell you, take it out of the container, put it in something airtight. I usually keep it in the fridge. Just look at that. So perfect. So good.

For those of you who are nut-free, I absolutely hope you try this. And let me tell you, I don't think you're going to be missing any commercial peanut butter. You're going to be able to make this at home with all the best ingredients. I am going to make myself a delicious roasted pumpkin seed butter sandwich with some jam.
