Hey guys, let's make these spicy lemon pepper chicken thighs. Here you can see how juicy and tender they are.
I cook them right on the stove top, and they're great for lunch meal preps or dinner. I'm using boneless, skinless chicken thighs, and I have about 2 lb for about $6.
I'm trimming off all the excess fat, adding our chicken to a bowl, adding some oil, and all our seasonings. I have listed in our description here. I'm doing a spicy lemon pepper, but you can make it any way you want. I let it marinate in the fridge for about 2 hours. You can cook it right away.
I'm hitting our cast iron skillet on high heat, adding some olive oil, and laying our chicken away from us. Patting it down, and then covering with a splatter screen. After about 5-6 minutes, I cook it over. Once the internal temperature is 180°F, I remove the chicken from the heat. Cook in batches so we don't overcrowd the pan. We get nice crispy edges. Rest for 10 minutes, and that's it.
