Y'all, lazy low carb recipes with cottage cheese. Come on. That's good. Dave, that's pretty easy, too. Okay, y'all. All right, guys. Welcome back to the channel. I know I said cottage cheese. Don't turn the TV yet. All right, we are tackling two uh recipes, both from the same creator, both from the same video, and it's a creator I don't think I've featured on the channel before, but that I've followed for a long time, and I love his content. Uh, it's Cooking with Dave. If you ever follow him, if you don't, please go do so. He is adorably funny and uh great at what he does and it's funny and and insightful and I really enjoy his content. But if you don't follow him, he does a lot of AI recipes where he's testing what he calls Chad GPT. Um, putting it to the test with creating low carb and keto recipes and he t tests them and makes them and tells you what you think. Um, so I have never at least knowingly made an AI recipe. I don't know if you have, but twothirds of what's on social media these days pretty much seems to be AI generated. So, I thought today we would put it to the test by tackling two of his recipes from a video he did about a year ago called of three lazy cottage cheese keto recipes you'll actually want to make. So, we're going to put that to the test by making two of them cuz I ain't going to recreate this whole video. Uh, and one of them, while he said it was comforting, didn't look as yummy to me. But the first recipe is a cottage cheese chicken nugget bites. He makes those in the air fryer. And his second one is a sweet version of a snack and it's keto cinnamon sugar doughnut holes. And again, both of these he collaborated, he says willingly and lets you know, uh, with Chad GPT, um, an AI agent. And they both came out pretty good. And when he says lazy, he means lazy. So that's enough yakking. Let's get cracking and try these two recipes. Come on.

Okay, so we're going to get started on this first recipe. It's going to go together pretty easy. Again, like he said, it is indeed lazy. Now, this starts with chicken. Um he says you can use rotisserie chicken. You can use canned chicken if you've got leftover chicken. Whatever you need, whatever you've got. Uh so I actually had some chicken breast that I needed to go ahead and shred up. So, I cooked those and I've shredded that. And I need a cup of chicken breast. So, um kind of I'm just going to use my fingers. Y'all don't mind, do you? It's just much easier that way. Uh I only need a cup of this. It was a big old chicken breast. So, we start with a cup of shredded chicken. Some of the other people in the comments even mentioned that they frequently make this recipe and they use canned. So, to this, we need the dreaded cottage cheese. It's got to be whipped. It's got to be smooth. pureed is what I'm trying to say. And a lot of you use an immersion blender, and I've tried it, and I have one. I just find it still easier just to use a good oldfashioned food processor. For me, it works just fine, and I I I find the cleanup not that unbearable. We need a cup of this. I'm just going to go ahead and use my same cup that I use for my chicken. Now, I'm going to use I put enough of this cottage cheese in here to for our second recipe, which is going to be sweet. So, I obviously don't want to cross-contaminate because doughnut holes, cinnamon roll doughnut holes with chicken bits doesn't sound real good. This is full fat cottage cheese. Now, you guys know that uh I frequently feature recipes on here and I don't tell you the ingredient amounts because um these aren't my recipes. As I've said many times, the people that did create them, they deserve the traffic. I'll send you to the links. They're going to be here on the screen. They also be in the video description below. So, he has printable recipes in his video description for this because these are AI generated. I don't feel quite as weird about maybe sharing the ingredient amounts. So, I'm going to quickly do that here. But, I'm telling you now, please for the sake of him because he's a fun guy and uh just the fairness of it all, please go check out his channel, watch this video uh cuz it's hysterically funny. I'll leave a link to it below and you can there print out the recipe just like I did from his video description. So, you can make this and uh he deserves the credit for putting this all together and collaborating with his friend and buddy Chad. To this, we've got a cup of cottage cheese that's been pureeed. We've got a cup of chicken. I need one egg. Funny enough, he forgot to add his egg when he was filming this video. And uh I'll just let you check out how he handled that. Uh he is like me, accidentrone in the kitchen. and get out of the way. He is also accident prone in the kitchen and um just has a good time with it. Uh cuz what else can you do? We're just here to cook and eat and do the best we can and sometimes all of us make a mess. All right. To this we need a little bit of salt. He just says a pinch of salt. So I'm just going to crack some in there. And we need some grated Parmesan cheese. This is a It's third cup, right? Yeah. third a cup of grated Parmesan cheese. You can use the shaker can like he did. Uh I had some Parmesan cheese. I ran it through my food processor before I did the cottage cheese. I just let it tumble around in there and it sort of grated there for me. Now, we also need to add in some almond flour. Let me get my sifter. We need a/4 cup of almond flour. And he leaves his on the counter so he doesn't have some of the problems that I do. I keep mine in the freezer just because nut flowers last longer in the freezer. But because of that, you really kind of do need to sift it out because as you can see, all those lumps and bumps kind of stay in. So sift y'all, you know me. Okay. To this, we also need some garlic powder. That is a teaspoon of garlic powder. And he said a pinch of paprika or you could do chipotle chili powder. Um that was optional. If you've ever had a commercial chicken finger, you know how they kind of have that little bit of something in there. And sometimes paprika can be that little something. So, let's just get this mixed up pretty well. While I'm doing this, I'm going to go ahead and preheat my air fryer to uh 375°. So, let me do that now. Hold on.

Okay, my air fryer is heating. So, let me just finish mixing this up. And you want this to He sort of went directly in to his air fryer. He immediately made the balls uh the chicken nuggets, sorry, a little uh cuz we're going to try to get 12 of them out of here. He immediately did that and they turned out okay. But I do think some people in the comments, particularly on the second recipe, it really kind of comes into play more. Nut flowers, particularly coconut flour, which is in the second one, but also almond flour, they tend to absorb moisture as the dough sits. So, letting it rest for, you know, 5 or 10 minutes before you form it into a ball can sort of solidify this a little more, uh, and kind of keep it together so that it just doesn't spread when it gets into the air fryer. So, um, I'm going to go ahead and start making that. He put his directly on the rack, but had a little bit of trouble, uh, getting it off there. But, so, um, I'm going to let this sort of heat up for a minute. In about 5 minutes, I'll come back and I'm going to make these into uh 12 little chicken nuggets and um we'll cook these out and I'll meet you back here and we'll test them. Pretty lazy, pretty easy. Okay, so my air fryer is almost preheated, so these are going to go in. um left a little space here. Again, um this probably works fine if you have a this is a wire uh rack, so things kind of stick a little more easily than a a basket, an air fryer basket that has some more flat surfaces, but I put mine on parchment. You could do whatever you choose. Um he also gives you an option to put this in the oven. Um, so I've only done 10 of these because I can get two more, probably three more out of this batter because if I screw this up, I want to be able to cook two more to salvage for my thumbnail photo. So, um, I'm going to put this in and, uh, well, I'll check you back here. This cooks for, what do you say? 10 to 12 minutes and you flip halfway through. So, I'll do that and I'll meet you back here and we'll test these and I'll let you know what I think about them. All right, see you in just a bit.

Okay, so our first recipe is in the still in the air fryer. It's got a few more minutes left, but I want to go ahead and start on the second one because it comes together really fast and it needs to kind of sit in the fridge for a few minutes. Although that's not part of his recipe, but we'll get into it. But this is his recipe for keto cinnamon sugar doughnut holes. He uh being Dave and uh Chad GPT. And this comes together really quickly. So, I'm going to just put this together. Uh it's going to be 1/4 of a cup of almond flour and uh 2 tablespoon of coconut flour. So you're going to use both in this recipe. And uh I'm going to sift those because obviously we just went through all of that. To this, we also need to add in two tablespoons of alulose or your favorite keto sweetener. I'm using Splenda Magic Baker because I love it. That's what I have on hand. and it measures one for one with uh regular sugar or any other thing like that. So, we also need a half a teaspoon of baking powder. I'm just going to sift all this together. And a half a teaspoon of ground cinnamon. Let me just get both of those in here. This one also needs a pinch of salt, which I'll do here. So, sift sift sift. Okay, so I've got that sifted out. Um, there's not much to this. Uh, we just got to add in the egg. It calls for an egg uh along with that baking powder. Just going to give it a quick beat. And to this, not as much, but a half cup of the smooth pureed cottage cheese. Again, this is full fat cottage cheese. And if you haven't made your own, um, and you haven't seen my video of me making my own, I'll leave a link to it up here because that was one of the most fun videos I've had filming, um, and had never made cottage cheese before. And shockingly, it was so easy to do. And you can really control how salty it is and, uh, the texture of it and all those other things and the ingredients of it. So, uh, I encourage you to do that. So, let's give this a quick mix. And from here, he also just sort of quickly put this right on the rack and started um cooking it. And these really flattened out a lot. People in the comments said, "Let that rest. Let this rest for a minute." Um and let that coconut flour do its thing because it's so, you know, um hyroscopic. It likes to drink, right? It needs to soak up all this moisture. And that's going to do that. So, uh, and then other people said it would probably keep its shape a little longer if you while let it rest for 10 or 15 minutes. Let it rest in the fridge. So, I'm going to do that. So, let me hold on. Let me wash my hands. I'm going to let it rest. And I'm going to let it rest in the fridge for 10 minutes. This is almost out. It's got 30 seconds. Um, but I think it's going to need some more time. It did not like to be flipped. I tried to flip one. So, um, I'm going to quickly put this together. Uh, put this away and come back to this and show you what these chicken nuggies look like. All right, see you in just a bit.

These are our chicken nugs after 11 minutes. He said 10 to 12. I tried to flip one and it was not happy about its life. Uh, it did not like that at all. So, I think what I need to do is ditch this paper, which I'm going to do. But before I do that, I didn't spray um my rack because I was using this parchment. So, I'm going to spray the top of these. flip them over onto just the actual rack itself without burning my face off and my fingers off. Um, and I think this is going to crisp up a lot more. Okay, they are definitely still quite mushy. I'm going to give them a little spritz on top just to help them brown a little bit more. Um, my parchment paper probably didn't do that uh justice. So, I'm going to put these back in and just kind of watch them and I'll let you know how long this eventually took. All right. I'll meet you back here as soon as these are doneish. Okay.

Okay. So, those are out of the oven and they turned out nice. The parchment paper did do a little number on them uh as far as cooking time, but I don't know that they would have survived the uh trip, the initial layown and cooking. I think they would have gone through this mesh sieve. Uh they took a little bit longer. He said 10 to 12 minutes. These have been in for uh 20. Mine took 20 minutes. Uh and about halfway through I took them off the parchment as you saw. So uh he also cooked his on his Tyer dome air fryer. And uh I have one of those. Um, and they cook hot and fast. So that might have sped up his cooking a little bit. I cooked this in the Typer sink air fryer, the sink oven, which has the air fryer function. So, it took a little bit longer, but you're just going to want to keep your eye on the prize here because he said 10 to 12. Mine took uh about 20. So, hold on one second. This makes two servings of uh six each. And I think I made what? 2 4 6 8 10. I made 10. I've got enough to do about two or three more just in case this didn't turn out beautifully. Uh I'm going to let these cool for just a second. and we'll talk about the nutrition and I'll try these. But while I'm trying them, we can get the other was others in the oven. So, uh, hold on one second. I'm going to get some photos and I'll be right back. Okay.

Okay. So, we're going to go ahead and put our keto cinnamon sugar doughut holes into the air fryer. I've got my parchment to get down. Again, this has been chilling for almost 20 minutes now. Um, they need to kind of stay in a little ball, but his immediately kind of sadly shrunk down. I need to get eight of these. I put my some oil on the parchment paper this time. Uh I'm going to give them a little space in case they do try to spread out. And I'm going to only do about six and give myself some leeway again in case I need to make a thumbnail and the first try doesn't work. And this is where I'm just going to say, you know, uh it's fun to watch Dave and I love when he does these AI recipes and a lot of them turn out great and these probably will too. Um, but it also highlights why a trusted recipe developer uh that you know and uh does good work and you've tried their food and you know how it comes out. There's a lot to be said for that and we know a lot of those and we've discovered a lot of them here on this channel. So, I hope that over the nine years that I've been doing this, I hope that I've brought you a lot of those human connections with real creators and real recipe developers that do wonderful work. So, uh these two, four, six, there's eight of those. I've got enough for 10 left. So, these are going to be a little smaller than probably what he called for because his recipe makes eight. But, okay, my air fryer is preheating to 350°. It's almost there. Uh, and we're going to put these in. I'm going to put them in uh starting at 7 minutes and we'll go to 9 if need be. And then I'm going to save the rest of this dough just in case. I'm going to come back and taste these chicken fingers. Um and then um we're going to put a little bit of cinnamon sugar butter on these doughnut holes when they come out. So I'll see you right back here in just a bit.

Okay, so let's test our cottage cheese chicken nugget bites. Air fryer bites. Uh let's talk about the nutrition real quick because this made, like I said, two servings. This isn't quite the total making of it, but uh one serving is six nuggets. If you eat six of these nuggets, uh that's 280 calories, 28 gram of protein, 17 g of fat, and 2 g of net carbs. So, pretty amazing stats. What does it taste like? Um they held up well. has a texture of kind of a pre-made chicken finger. You know, the ma like the um not a chicken breast nugget, but a chicken finger. Tastes like chicken finger. It does not taste like cottage cheese. That's good. It's a little bit dry. Um, not in a bad way, but obviously it's begging for some dipping sauce, which he uh makes dipping sauce, and I'll let you follow his recipe for a cottage cheese dipping sauce in his video. Okay, so these little guys are out. Uh, these also took a lot longer. He said 7 to nine minutes. And these took uh about 12 minutes for me in my air fryer. And they're soft. They're really soft. I believe they're done. Now, this is where we're going to make a little bit of a topping for this for our doughnut holes. This is a tablespoon of alulose and a half a teaspoon of cinnamon. And we're going to put in a tablespoon of melted butter. And just give this a quick stir. And then this will be sort of spooned over all of the donuts as a cinnamon sugar glaze. Nope. I'm going to use a brush. Okay. Let me give this a little brush on all of these. Okay. Let's quickly talk about nutrition before my battery dies. I can see it happening up there. Two of these. If you make two of the uh these, it makes four servings. Two of them is 160 calories, six grams of protein, 12 gram of fat, and 2 gram of net carbs. So, those little guys look beautiful, and I know they're hot, but they hold together pretty well. What do they taste like? Well, I mean, it's a blast of butter and alulose. Doesn't taste like cottage cheese. That's real good. Could have used them maybe another minute in the air fryer. Okay. Yeah, those are pretty good. Uh those are really good. Um, not my favorite keto dessert, but they sure came together pretty easy. So, this whole thing was a very fun experiment. Yeah. Um, there you have it. Low carb uh cottage cheese lazy easy Chad GPT AI cooking with Dave recipes. I'm finally glad I finally got to try one of uh some of his stuff. Although I know this is probably not technically his recipe. It sure was fun to do and I know he uh had fun filming it and creating it for you guys. So, please be sure to go check him out.
