[Music] then we're going to make salam devi swedes or hedgehog slice the romanian version okay so i'm going to post the ingredients that i used and the quantities in the description as today i'm making for a big party so i've times ate the recipe so you will not need this much ingredients but we are using crushed biscuits that we crushed earlier we've got some nestle cocoa this is the one i prefer to use unsalted butter some rum for flavor normal full cream milk and sugar let's get started.

okay so we're going to get a big non-stick pot and we're going to put in the sugar and the milk we're going to turn it on to a medium-high heat to start bubbling. [Music] what we want is we want the milk and the sugar to come together and it gets a bit thick and sticky like a [Music] syrup. [Music] now normally with a smaller quantity once it starts bubbling and the sugar has fully dissolved you let it bubble continuously for about another one or two minutes and then you'll be ready to add the cocoa powder and the butter but because this is a large quantity i'm just going to let it bubble a bit longer. [Music]

okay so if you can see that that's gotten quite thick there so we're going to add the butter first be very careful with the butter so the syrup doesn't splash up on you because it's very hot you just mix that through until all the butter has melted you can turn the heat down to a medium-low heat at this point. [Music] so now that the butter's almost all gone we're going to add the cocoa powder mix that through until it's all dissolved. [Music] and we're also going to add the rum you put as much as little as you like i like it to just just taste the rum not have too much in there so i don't put very much at all and then what you will do is you'll bring it to the boil one more time just to burn off that alcohol in there. [Music] all right that's that sauce is ready we're going to turn off the heat and we're going to let it cool slightly before we add it to the biscuits. [Music]

okay so now it's time to put it all together so i've got my big bowl of biscuits i've actually put some separate so that when you add the liquid if it's too dry it takes a long time to make more liquid to get to the consistency that you want so you're better off taking some out adding the liquid and then you can just add as many biscuits as you need so we're going to pour in our liquid now you can also add some roasted walnuts that have been chopped up or some desiccated coconut before you add the liquid in if you like to have that in your hedgehog slice i'm just making a simple one today so we're just going to stir that through it's still hot so be careful. [Music] do [Music] [Music] [Music] [Music] you [Music] [Music] okay so that's what we wanted to look like so nice and thick but still quite moist which will make a really delicious salan dipping squeeze that's not dry okay you can see that that's the consistency we want it. [Music] let's ensemble so to put it all together we need blad wrap now what we're going to do is get a nice big piece out. [Music] put a few good scoops on there in the middle. [Music] [Music] so and you grab it to the side then you use the glad wrap to hold it into a sausage. [Music] and you just keep rolling it onto the glad wrap like that. [Music] and then well at like that and you twist it tuck it under get the shape that you want the size that you want push on this end. [Music] so it's nice and tight no air bubbles and then you turn this end and there we have our first one it's all nice and soft and uniform beautiful pop that aside and get onto the rest of them. [Music] so [Music] do [Music] now we've finished making all of them we're going to put them in the fridge to rest overnight so they'll firm up and then tomorrow we can slice i hope you enjoy making them and i hope you enjoy eating them.
