Today, we're making something that is going to completely change your carnivore dessert game. We're making carnivore condensed milk. This is thick, creamy, sweet condensed milk made from just three ingredients. Heavy cream, butter, and a carnivore-friendly sweetener. No sugar, no dairy additives, no plant-based anything. Just pure animal-based ingredients transformed into this luscious, versatile ingredient that you can use in so many ways. Add it to your coffee for a sweet, creamy boost. Use it to make carnivore desserts like flan, ice cream, or dulce de leche. Or honestly, just eat it by the spoonful when you're craving something sweet. This is one of those ingredients that once you make it, you'll always want to have a jar in your fridge. Let's get into it.

Before we dive into making this, let me tell you what makes this condensed milk so special. Traditional sweetened condensed milk is made by simmering milk with a ton of sugar until it reduces and thickens. It's incredibly sweet and incredibly carb-heavy. One tablespoon of regular condensed milk has about 10 g of sugar. Our carnivore version uses heavy cream instead of milk, which makes it even richer and creamier. We add butter for extra richness and to help with the texture. And we use a powdered carnivore-friendly sweetener instead of sugar, so you get all the sweetness without any blood sugar spike. The result is this thick, creamy, sweet condensed milk that tastes just like the real thing, but fits perfectly into a carnivore or keto lifestyle. And it's incredibly versatile. Once you have this in your fridge, you can elevate so many recipes.

All right. Here's what you need. For ingredients, you need two cups of heavy cream, which is about 480 ml or 16 fl oz. Use the best quality cream you can find, preferably organic or from grass-fed cows. 1/4 cup of unsalted butter, which is about 60 g or 4 tbsp or half a stick. Make sure it's unsalted so you can control the sweetness without any saltiness interfering. And 1/3 cup of powdered sweetener, which is about 65 g or 2.3 oz. I recommend using powdered allulose or powdered erythritol. Allulose is my preference because it tastes exactly like sugar and doesn't have any cooling aftertaste like erythritol can have. Make sure your sweetener is powdered, not granulated. The powdered form dissolves much more easily and creates a smoother texture. That's it. Three simple ingredients.

For equipment, you need a medium-size saucepan. Make sure it's got a heavy bottom for even heat distribution. You need a wooden spoon or heat-resistant spatula for constant stirring. And you'll need a glass jar for storage. A mason jar or any airtight glass container works perfectly.

Let's make this carnivore condensed milk. Place your medium-size saucepan over medium heat. Pour in your two cups or 480 ml of heavy cream. Let it heat slowly and evenly. Stir it occasionally as it heats to prevent any scorching on the bottom. After about 5 to 7 minutes, the cream should start to steam and small bubbles will form around the edges. Keep heating until you see larger bubbles breaking the surface all over. Immediately reduce the heat to low or medium-low.

Now comes the crucial temperature control part. If the heat is too high and it boils vigorously, the mixture might burn on the bottom or it could separate and curdle, and that's definitely not what we want. A gentle simmer is what you're looking for. It's better to cook this a little longer at a lower temperature than to rush it at high heat and risk burning or separating. Once your cream is at a gentle simmer, add your 1/4 cup or 60 g of butter. Drop it right into the simmering cream. It'll start to melt immediately. Stir it in until the butter is completely melted and incorporated. Now add your 1/3 cup or 65 g of powdered sweetener. Sprinkle it over the surface of the cream and butter mixture, then stir it in really well. Make sure the sweetener dissolves completely with no clumps. Keep stirring until you have a smooth, uniform mixture with no visible sweetener granules.

Now comes the most important step, and this is where patience and attention really matter. You're going to simmer this mixture for about 20 minutes, and you need to stir constantly. I know that sounds tedious, but it's absolutely crucial. This isn't like other recipes where you can walk away for a few minutes. You need to stay with this and stir pretty much the entire time. It prevents the mixture from sticking to the bottom of the pan and burning. Dairy products burn easily, and once they burn, there's no saving the batch. You'll have a scorched, bitter taste that ruins everything. Stirring helps the mixture reduce evenly. As the water content evaporates, you want that evaporation to happen uniformly throughout the mixture, not just on the surface.

As you stir over these 20 minutes, you're going to see the mixture transform. It'll start to thicken noticeably. The volume will reduce significantly, maybe by about a third to a half. The color will deepen slightly to a more cream or light beige color. And the texture will go from thin and pourable to thick and coating the back of your spoon. This transformation is what you want. You're concentrating all the flavors and creating that signature thick, sticky consistency of condensed milk.

While you're stirring for these 20 minutes, let me talk about why heavy cream is such an incredible ingredient and why it's perfect for carnivore eating. Heavy cream is essentially the fat that rises to the top of fresh milk. It's concentrated dairy fat, usually about 36 to 40% fat content. Because it's so high in fat, it's incredibly nutrient-dense. Heavy cream contains fat-soluble vitamins A, D, E, and K, especially if it's from grass-fed cows. These vitamins are essential for immune function, bone health, antioxidant protection, and cardiovascular health. Heavy cream also provides conjugated linoleic acid or CLA, which has been shown to have anti-cancer properties and support healthy body composition. And here's what's really important. Heavy cream is very low in lactose compared to milk. Lactose is the sugar in dairy, and it's mostly found in the watery part of milk, not the fat. When cream is separated from milk, most of the lactose stays behind in the skim milk. This is why many people who can't tolerate regular milk can tolerate heavy cream without issues. The fat content is high and the sugar content is very low, which makes it perfect for keto and carnivore eating. When you reduce heavy cream like we're doing in this recipe, you're concentrating all those beneficial fats and nutrients while keeping the carb content minimal. Each serving of this condensed milk has only about 1 g of net carbs, which is incredibly low compared to regular condensed milk that has 10 or more grams per tablespoon.

After 20 minutes of constant stirring, your condensed milk should be significantly thickened. If it's still too thin after 20 minutes, keep simmering and stirring for another 5 to 10 minutes until it reaches the right consistency. Let the mixture sit in the pan for about 10 minutes to cool slightly. As it cools, it will continue to thicken even more. Stir it occasionally during these 10 minutes to prevent a skin from forming on top. Carefully transfer the condensed milk to your glass jar. Use a funnel if you have one to avoid spills or just pour slowly and carefully. Scrape every bit out of the pan with a rubber spatula because this stuff is liquid gold and you don't want to waste a drop.

Once it's all in the jar, let it cool at room temperature for another 10 to 15 minutes, then place the jar in the refrigerator. Now here's something really important that the original recipe mentioned. This condensed milk is so much better once it's fully cooled. When it's hot or warm, it's thin and pourable. But as it cools in the refrigerator, it thickens dramatically and develops this perfect condensed milk consistency. Let it chill in the fridge for at least 2 to 3 hours, but ideally overnight. Once it's fully chilled, it'll be thick, sticky, sweet, and absolutely perfect. The cooling and thickening process is what transforms this from just reduced cream into proper condensed milk.

Now let's talk about all the ways you can use this carnivore condensed milk because this is where it gets really exciting. First, you can add it to your coffee. A tablespoon or two of this in your morning coffee creates this incredibly rich, sweet, creamy drink. It's like a homemade, carnivore-friendly coffee creamer. Way better than any store-bought creamer, and you know exactly what's in it. Second, you can use it to make carnivore desserts. This condensed milk can be the base for carnivore flan, carnivore ice cream, carnivore key lime pie filling if you're doing animal-based, carnivore cheesecake. The possibilities are endless. Any recipe that traditionally uses sweetened condensed milk can be adapted to use this version. Third, you can heat this condensed milk further to make dulce de leche. Just put the jar in a pot of simmering water for an hour or two, and it'll caramelize and turn into thick, rich dulce de leche. Fourth, you can drizzle it over carnivore pancakes, waffles, or that yolk bread we made. It's like a sweet syrup, but way richer and more satisfying. And fifth, honestly, you can just eat it by the spoonful when you're craving something sweet. A small spoonful of this condensed milk is incredibly satisfying. It's rich, creamy, and sweet. And because it's so concentrated, a little bit goes a long way. It hits that sweet craving without spiking your blood sugar or derailing your carnivore eating.

For storage, keep this condensed milk in an airtight jar in the refrigerator. It will last for up to 2 weeks, though it usually gets used up way before that in my house. The high fat content and the sweetener both help preserve it. If you want to make a bigger batch, you can easily double or triple this recipe. Just use a larger pot and extend the simmering time slightly since you'll have more liquid to reduce. Use the best heavy cream you can find, good quality butter, and a sweetener you like the taste of. The better your ingredients, the better your condensed milk.
