I'm going to show you how to cook the world's greatest chicken breast with the easiest recipe you've ever seen. Go ahead and take our full chicken breast. My favorite season goes on every meat. It's a secret seasoning. If you don't know by now, here it is.
If this is stuck to the pan, I can leave it all around the stove like this. So, we're going to leave it there until it naturally unsticks effortlessly. That's the secret to cooking on stainless steel.
If you don't like chicken breast, it's probably because you've had it dry. The secret to perfect chicken breast is making sure it's moist. The secret to a moist chicken breast is the internal temperature. So, you want to get yourself a thermometer and hit the secret level that big chicken doesn't want you to know. I'm going to show you in a second here.
After about 8 minutes, we're going to give it a flip. Look at how beautiful that perfect char is. That's everything right there. The beautiful thing is we have fond at the bottom now. This is going to turn into the greatest chicken dish of your life. Watch how simple this is. Green onions sprinkle all around. Couple glug glugs of white wine to deglaze that fond. Handful of spinach on there like that. Put a half a cup of water and some heavy cream right on the top like that. And hit it with a little more salt and pepper. And put your top on, turn it down to low. We're going to simmer this until the chicken hits the magic 155°. When that hits, this is going to be perfect.
Look at how beautiful that looks. It's been about 5 minutes. Chicken breast is one of those things you really want to get the temperature right on. Looking beautiful. I'm going to crank it back up to the high end of medium low. That way we can reduce this sauce a bit. See how it's a little liquidy here? Of course, while we're doing that, a little bit of butter. Let that melt in there. Helps thicken that sauce up. All that fond at the bottom in here, guys. This is like nothing you've ever tried before. Look at that beautiful sear. That fond combined with that cream sauce, that wine, all those flavors in there is going to be one of the greatest, simplest things you can do. I'm telling you you can do this tonight. It's really going to be spectacular if you use stainless steel cuz then you get the fond. Every other cooking surface can't do fond like stainless steel, so make sure you do this on stainless steel. This will be one of your new favorite dishes you ever make.
Transfer that chicken to the plate. Go 1 more minute just till it's a little bit thicker. If you really want it to at this point, put a pinch of nutmeg, a little bit of lemon, a little bit of Parmesan in here. But, I like keeping it simple. And it's always important to scrape that side fond up. Take a spinach here, get that side fond off into the pan. We're almost ready to pour it over that chicken. You can add something like a roux or even cornstarch and water. Or, you can use heat and reduce it so all the water comes out and actually thickens. I like reducing it cuz it just concentrates the flavor.
Let's pour this over. Take that. Just pour it right over that chicken like that. Oh my gosh, guys. Look at that. You got that chicken fond cream spinach over top of that chicken. So, chicken breast 155. Dipping in that cream spinach fond sauce. Let's put it to the test. Oh my gosh. This is so easy to do. Make it tonight.
