How This Restaurant Chain Took Over Airports

If you were to open a restaurant, what do you open? I look for a real estate play.

Is there a restaurant concept which would work in a setting where nothing else would work? I'll give you an example of this. The guy who founded, I think it's called Caviar House, which you find at every airport, selling kind of effectively high-end seafood.

I didn't realize, I was asked the question, you know, I'm just about to get on a pressurized metal tube for 12 hours. I really don't want to risk eating something that'll give me the So, I was always a bit baffled by how many Caviar Houses there were.

It's actually ingenious, because it's only seafood, all you need is an electricity supply, you don't need any ventilation. So, you can occupy airport space which nobody else can occupy. And so, the guy made a fortune basically spotting the fact that there's a particular food concept which doesn't require fans, heating, ventilation, or any of the other stuff.

So, basically all you need is a big fridge and a 240 volts and a few stools and you're off to the races.
