I'm currently so sick, and what do I want? Soup. And one of my favorites for when I'm sick is Italian wedding soup. So, here's how you make it.
And no, the soup isn't served at weddings, but it's nickname "married soup" because all the flavors marry together so well.
Start off by mixing the meatballs, which is a combo of beef, pork, breadcrumbs, parmesan, eggs, and herbs. Sear the meatballs in a large pot with avocado oil over medium to high heat until they're golden on two sides. This helps create flavor and also a better texture for the balls.
In that same pot, add onions, carrots, and celery, and sauté until cooked through, salting as you go. Add garlic and then deglaze the pot with white wine. Wine is very acidic, which balances out all the flavors.
Stir in the stock, herbs, seasoning, and simmer for around 10 minutes on low to develop flavor. And then I stir in the meatballs and gluten-free orzo pasta and simmer that for another 10 minutes. This cooks through the pasta and the meatballs, and you have the best soup. Top with parmesan to marry the flavors all together.
