It feels really strange posting this week, as if it's normal. For many of us, this week isn't normal, and we're looking for an escape or some comfort. For me, I find comfort in cooking. For others, I know you find comfort and refuge in cooking videos.
So, although I do feel very disoriented right now, if one person finds comfort in my videos, I hope this brings you some joy for the minute that it is. My favorite comfort meal is a classic herb roasted chicken. So, naturally, I made one yesterday.
I like to stuff mine with herbs and lemons, and then also make an herb butter with rosemary, garlic, and lemon zest to place under the chicken skin, which makes it nice and brown and crispy. I then add a bunch of white wine to the pan I'm roasting it above because it adds a great flavor when I baste it. Also, you know, you need to take a swig on this kind of day.
I roast at 375, and every 30 minutes I baste with that white wine it's cooking above. And it really ends up with a delicious, crispy roast chicken that's super moist and honestly just has the flavors of home and comfort.
