Waga Mama in the UK kind of convinced us that this business of the food arriving at in at a random order, which of course massively helps their kind of Henry Ford production efficiencies, was authentically Japanese.
Just to understand, we do this in the traditional Japanese way. So the food arrives fresh and ready, as you know, fresh from the kitchen as soon as it's ready, not necessarily in the order you requested.
They'll go, "That sounds good." I then spoke to people in Japan who said, "No, no, that doesn't happen in Japan at all. They're actually quite regimented in the order they bring you the food. But you can basically get away with anything under the um wonderful eeges of of pretending to be Japanese. I think."
